Scandinavian Brown Cabbage Soup Recipe
This recipe is from House & Garden mag 1964.The simplicity belies the subtle flavors in this tasty soup.It is a great winter soup as most ingredients will already be in your house.

Ingredients
  • 1/4 cup butter
  • 2 Tbls.sugar
  • 1 large white cabbage,shredded
  • 1 1/2 quarts hot beef bouillion,(I use vegetable broth)
  • 1 Tsp. salt
  • 1/2 Tsp.black pepper
  • 1/8 Tsp.allspice

Directions
  1. Melt butter in a heavy kettle.Stir in sugar and cook until browned.Do not scorch.Add cabbage and cook 3 minutes,stirring constantly.Add remaining ingredients.Simmer covered about one hour.
