Ingredients

3 parts Red wine vinegar

1 part Olive or vegetable oil

3-4 tbs sugar

1-2 tsp Red pepper flakes

1 tsp Oregano

1 dash freshly ground pepper

1 lemon

Directions

Dissolve sugar in vinegar; may want to stir with a spoon

Add red pepper flakes, oregano and pepper

Finely grate or zest half of lemon in dressing;save other half of zest directly on salad

Add oil

Wisk dressing until creamy in texture

Pour all over salad and toss

I had a similar dressing on a train in Switzerland, which is how I pieced together this recipe. It is very light for summer salads and if you prefer more vinegar to oil.
