Ingredients
  • 3 parts Red wine vinegar
  • 1 part Olive or vegetable oil
  • 3-4 tbs sugar
  • 1-2 tsp Red pepper flakes
  • 1 tsp Oregano
  • 1 dash freshly ground pepper
  • 1 lemon

Directions
  1. Dissolve sugar in vinegar; may want to stir with a spoon
  2. Add red pepper flakes, oregano and pepper
  3. Finely grate or zest half of lemon in dressing;save other half of zest directly on salad
  4. Add oil
  5. Wisk dressing until creamy in texture
  6. Pour all over salad and toss

I had a similar dressing on a train in Switzerland, which is how I pieced together this recipe. It is very light for summer salads and if you prefer more vinegar to oil.


We love this... the lemon brings it to the table so fresh! Another great post!
