How to make it

  • Dissolve sugar in vinegar; may want to stir with a spoon
  • Add red pepper flakes, oregano and pepper
  • Finely grate or zest half of lemon in dressing;save other half of zest directly on salad
  • Add oil
  • Wisk dressing until creamy in texture
  • Pour all over salad and toss

    I had a similar dressing on a train in Switzerland, which is how I pieced together this recipe. It is very light for summer salads and if you prefer more vinegar to oil.
