Ingredients
  • 1-1/2 cups flour
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3/4 cup shortening (butter preferred - natch)
  • 2/3 cup white sugar
  • 2 extra large eggs - separated
  • 3/4 whole milk
  • 2 unsweetened chocolate squares (2 ounces)
  • 1/2 cup coarsely chopped nuts (optional - but has that 'oh my' factor)
  • 1 teaspoon pure vanilla extract
  • ***Equipment needed:
  • Sieve, waffle iron, mix master or hand mixer, several bowls

Directions
  1. Measure flour, salt and cinnamon, and place into sieve.
  2. Sift into bowl and set aside.
  3. On stove top, melt chocolate on low so as to not scorch chocolate and add a little of the milk (3 Tablespoons) if you need to - it can help tremendously to aid in melting the chocolate and preventing scorched chocolate.
  4. Beat up egg whites first and set aside, beat until stiff but not dry.
  5. In different bowl, cream butter in mixer, add sugar and mix till light and fluffy.
  6. Add milk to beaten egg yolks and stir till combined.
  7. To butter and sugar mixture, add remaining wet ingredients and dry ingredients alternatively and beat in mixer.
  8. Once combined, add melted chocolate and mix once again.
  9. Add nuts if you are using them for that 'oh my' factor and vanilla extract.
  10. Stir once more.
  11. Remove from mixer, and fold in stiffened egg whites.
  12. ***Important note when baking/cooking in waffle iron:
  13. Bake in waffle iron that is set at a lower temperature than you would normally use when making plain waffles to prevent burning.
  14. ****Time to eat
  15. These are a nice base for mouse or ice cream. Serve these up with ice cream and your favorite dessert sauce such as pecan, fudge or caramel, OR sift powdered sugar over the top of them and dolloped with sweetened whipped cream.
