Ingredients
  • 1 teaspn olive oil
  • 1 Tlbspn cream cheese
  • 2 eggs
  • 4 thick slices of bacon
  • 8 to 10 ounces of deli thin sliced turkey or chicken (or slice up your own) heretofore to be referred to as "the chicken".
  • Swiss cheese, slice enough to cover 2 slices of bread
  • American cheese, amount same as above
  • 8 very thin slices of a small tomato, amount as above (set aside on paper towel).
  • 4 slices of commercial white bread

Directions
  1. Cook bacon and set aside, keeping it hot.
  2. Beat together cream cheese and eggs in mixing bowl. If the cheese is cold and stiff, smoosh it around to soften it, then add eggs. After a thorough beating pour into a soup plate.
  3. A griddle that holds 4 bread slices is best, or a pan that holds 2.
  4. Pour 1 t olive oil onto griddle and spread with a bundled up paper towel (for minimum oil usage) and put on medium heat burner.
  5. When griddle is medium hot, dip both sides of bread in the egg mix (4 slices for griddle, 2 slices for pan) and put on griddle.
  6. Heat the chicken in microwave or a pan, so it and the bacon are hot and ready.
  7. Turn the bread when golden brown, put Swiss cheese on 2, and American on the other 2 (if using smaller pan cover 1 bread with Swiss, the other with American).
  8. Pile all the chicken on the 2 bread slices covered with Swiss, cut bacon to size and position a single layer atop the chicken (don't leave extra bacon hanging out).
  9. Top the bacon with a layer of tomato slices.
  10. When the cheese starts to melt and your resident psychic tells you the second side is cooked to a golden brown, flip the American cheese topped bread slice onto the other, bigger pile and remove to a serving plate.
  11. Cut each into 4 pieces diagonally, pressing very gently.
