Cheese Straws Recipe
Where I grew up in the South you could not have a wedding or baby shower without Cheese Straws. I live in Florida now and most people here have never heard of them. They are GREAT and well worth the effort.

Ingredients
  • 8 oz New York Sharp Cheddar Cheese
  • 1/2 cup margarine
  • 1 1/2 cups plain flour, sifted
  • Cayenne pepper to taste (I like a good bit to give them a slow burn)

Directions
  1. Preheat oven to 350 degrees
  2. Allow cheese and margarine to come to room temperature in a mixer bowl. In an electric mixer, cream the cheese and margarine. Add flour and cayenne pepper, mixing to form a soft dough. If dough is too sticky, add 1 or 2 more tablespoons of flour. Form dough into rolls to fit a cookie press with the ridged line opening in place. Press straws from the cookie press onto a grease cookie sheet. Cut into three inch sections. Bake in preheated oven at 350 degrees on the middle rack of the oven for about 15 minutes. Cheese straws should not brown on top. Watch them carefully since they cook quickly.
  3. The cayenne pepper gives this recipe it's zip. Don't leave it out. This recipes freezes easily to be used when needed.

Yes, I grew up in East TN and we had these at every special get-together and for the big holidays - and they are soooo delicious and addictive. You get a high ^5 from me, hon. A classic recipe and a real keeper. Great post!

Why not butter? also if you want zing, try purira pepper powder. It's hard to get unless you grow your own, or it can be found on the net.
