Delicious Easter Ham With Tangerine Glaze Recipe
This was a Tyler Florence recipe that I adjusted and cooked my way. I made it last Easter. Everyone loved it. The tangerines give it the most wonderful flavor. DELICIOUS

Ingredients
  • 1 (8 to 10-pound) fully cooked smoked ham, bone-in
  • Freshly ground black pepper
  • 1 bunch fresh sage leaves
  • 1/4 cup extra-virgin olive oil
  • 2 sticks unsalted butter, cut in pieces
  • 2 tangerines, remove seeds, and slice thinly,
  • 2 cups tangerine juice, squeezed from extra tangerines (I used my electric juicer)
  • 2 cups packed *light brown* sugar
  • 1 cup water
  • 1/4 teaspoon whole cloves
  • 2 cinnamon sticks
  • 1-1/2 pounds carrots, peeled (I omitted the carrots)

Directions
  1. Put ham in large roasting pan, fat-side up
  2. Using a sharp knife, score ham with cuts across skin, about 2-inches apart, 1/2-inch deep
  3. Cut diagonally down the slashes to form a diamond pattern
  4. Season ham with freshly ground pepper
  5. Chop about 8 sage leaves and put in bowl
  6. Mix with olive oil to make paste
  7. Rub sage oil all over ham, getting flavor into all slits
  8. Bake ham for about 2-3 hours at 325 OR 350 degrees (be sure to watch, so that the glaze is not browning too fast)
  9. TANGERINE GLAZE
  10. I made this immediately after I put ham in oven
  11. Place saucepan over medium heat
  12. Add chunks of butter, thinly sliced tangerines, tangerine juice, brown sugar, water, spices
  13. Slowly cook down to syrupy glaze
  14. This should take about 30 to 40 minutes
  15. After ham has been cooking for about 1 hour
  16. You may want to remove ham from oven to pour tangerine glaze (including the pieces of fruit) all over ham
  17. Scatter remaining sage leaves on top of ham
  18. Place ham back in oven, continue to cook , basting with juices every 30 minutes
  19. Ham is done when it is heated through completely and the glaze glistens
  20. *If using carrots, scatter them around ham and coat in tangerine glaze
  21. Cook until the carrots are tender and ham is dark and crisp
  22. Ham should glisten with the sugary glaze
  23. Set ham on cutting board and let rest before carving
  24. If cooking carrots with ham, serve carrots and tangerine glaze on the side, separately

Alterations


As we all know, ovens are not all the same temperature. For some ovens, cooking the ham at only 300 degrees may be just right. Please be aware of this, so that the ham will not be too dry. :)
