These truly athentic meatballs are wonderful. You should have boiled meat of some kind (chicken or spare ribs) ready. This entails letting the meat simmer in stock for a few hours.

Ingredients
  • 1.1 lbs boiled mixed meat
  • 1 ½ freshly parmesan cheese, grated
  • 1 egg
  • 1/2 cups breadcrumbs
  • 1/3 cup milk
  • 4 large sage leaves
  • 1 tbsp fresh rosemary
  • 1 tbsp fresh thyme
  • More bread crumbs to cover the balls
  • Salt
  • Olive oil and butter to fry in

Directions
  1. Put your boiled meat and herbs in your food processor and blend for 1-2 minutes and then add the egg, the 1/2 cup breadcrumbs, parmesan cheese, salt, and milk. Blend all of this until it is a paste-like consistency.
  2. Roll out large meatballs and roll in bread crumbs.
  3. Fry these beauties in butter and oil until a golden brown like the picture.
  4. Enjoy!
