I found this recipe in a cookbook but I have changed it a lot to our liking, usually serve this with my honey wheat rolls (homemade), salad and something to drink. It is a good chill chaser to we love this casserole.

Ingredients
  • 2 lbs. extra lean ground beef
  • 1 large onion, chopped
  • 1 medium green pepper, seeded and chopped
  • 1 can (14-3/4 oz.) cream-style corn
  • 1 can (10-3/4 oz.) tomato soup
  • 1 can (8-oz.) tomato sauce
  • 1 jar (2-oz.) sliced pimientos, drained
  • 3 Tbsp. chopped jalapeƱo pepper
  • 3 cloves garlic, crushed
  • 1-1/2 tsp. salt
  • 3/4 tsp. chili powder
  • 1/4 tsp. stone ground mustard
  • 1/4 tsp. pepper
  • 1 pkg. (8-oz.) medium noodles cooked and drained
  • 1 jar ( 4-2/2 oz.) sliced mushrooms
  • 1-1/2 cups shredded sharp Cheddar cheese

Directions
  1. In a large skillet, cook beef, onion and green pepper over medium heat until the meat is done and vegetables are tender, drain.
  2. Add the next 10 ingredients. Stir in noodles and mushrooms.
  3. Transfer to a greased 13x9x2" baking dish. Sprinkle with cheese. Bake uncovered at 350 degrees for 45 minutes or until heated through.

I just made this recipe for my supper when I got home from work & I had to say thankyou for a wonderful meal. It was really good & definately deserved the '5' I gave it. It was so easy to make & tons of flavor. Brianna


I was telling my friend in Grand Prairie, Alberta about this recipe & how much I enjoyed it & she asked me to EMail it to her. So she will be making it for supper over the weekend. It was even better the next day. It makes a huge amount that was too much for just me so I cut it into portions & put them in Tupperware containers in the freezer. I took one out last night & thawed & heated it up in the microwave & it was just as good as when I first made it. I'm even more impressed. Thanks

It i a very good recipe yes it does make a huge amount so I do the same thing just put into Tupperware and put it in the freezer. When some thing going on at our church I will make one of my casseroles to take and bringing none of it home. Thanks for sharing this recipe with other folks.
