Molasses Baked Chicken Recipe
From "Soul Food" by Joyce White, found in mom's box of goodies. I remember this as a week night meal, very tasty and easy to do.

Ingredients
  • 1 chicken (3 1/2 lbs.) cut up
  • 1 tsp of salt
  • 3/4 tsp of black pepper (fresh ground makes a difference)
  • 2 tablespoons of apple cider vinegar
  • 2 tablespoons of dark molasses
  • 2 tablespoons of spicy brown mustard

Directions
  1. Heat oven to 400 degrees.
  2. Sprinkle chicken pieces with salt and pepper.
  3. Combine vinegar, molasses and mustard.
  4. Coat chicken with this mixture rubbing into skin and meat.
  5. Place chicken in large greased roasting pan.
  6. Place on the lower shelf of the oven and roast 20 minutes.
  7. Turn the chicken over and bake until the skin is golden and the juices run clear when pierced with a fork, about another 20 minutes.
  8. Calories per serving: 480
  9. 28 grams of fat
  10. 4.8 grams of carbohydrate
  11. .5 gm of fiber
  12. 790 grams of sodium
  13. 155 mg cholesterol
  14. Not good for you but it is yummy, just not a nightly preparation.
