Texan Blackeyed Peas Recipe
These are so easy yet so tasty and very impressive. Every time I serve these I get rave reviews. Hope you enjoy as much as we do.

Ingredients
  • 1 ham hock (about 1/2 pound)
  • 2 cups water
  • 1 medium onion chopped
  • 1 cup dried black-eyed peas (soak overnight in refrigerator)
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper

Directions
  1. Place meat in saucepan with water then add onion and cover.
  2. Cook over low heat for 1 hour.
  3. Drain peas and discard any discolored ones.
  4. Add peas to meat and add more water if necessary.
  5. Continue cooking for 1 hour or until peas are tender.
  6. Season with salt and pepper then cut ham hock into small pieces and add back to peas.

Alterations


Did you know that black-eyed peas are different from other dried beans in that you don't really need to soak them? Yes, it will shorten cooking time a little, but it's not essential. If you forget to soak them, you can still make the dish in a reasonable amount of time.
