Cajun Sausage And Tomato Gravy Recipe

This is a dish that I grew up with. I still love it!

Ingredients
- 1 package of sausage, sliced (whatever brand you like)
- 2 8oz. cans of tomato sauce
- 1 large can of diced tomatoes
- 1 chopped onion
- salt, black pepper, sugar and creole seasoning to taste
Directions
- Brown sliced sausage in skillet and add a little water
- Add chopped onion
- Cook until onion is clear
- Add tomato sauce, diced tomatoes and seasonings to taste
- Cook on low for 30 mins
- Serve over rice
- We also sometimes use instead of sausage, sliced weiners. Or you can crack eggs over the tomato gravy, cover with a lid until the eggs are cooked.

My mother in law loves when I make this. Only difference is I add garlic and bell pepper to it. It's great! Couldn't get me to eat red gravy when I was younger, now I crave it.
