How to make it

  • Place carrots, onions, tomatoes, cabbage, green beans, peppers, and celery in large pot. Add onion soup mix, tomato juice, beef broth, and enough water to cover vegetables. Simmer until vegetables are tender. May be stored in the refrigerator for several days.

    I made a big pot this morning to ward off the chill of our Columbus, Ohio blizzard and I had a nice bowl full - it is awesome! I'd suggest adding salt to taste, but that's a personal preference.
