How to make it

  • Spray a griddle with non-stick stuff, and bring it to a medium-high heat.
  • Place 1/4 cup of grated Parmesan cheese on the griddle in a little mound and watch it very carefully. It will melt and spread and burn very quickly.
  • When the bottom is golden, turn the crisps over to brown the other side lightly. This should take only a minute or so on each side.
  • They will be soft when done, so lift the crisps off the griddle with a spatula and lay them flat to crisp up.
  • They get crispier as they cool.
  • 2 crisps = 1 serving
