Ingredients
  • 2 Tbs. mashed potatoes
  • 2 1/4 C. confectioner's sugar
  • 1-12 oz. jar peanut butter

Directions
  1. Place potatoes in mixer bowl.
  2. Add sugar a little bit at a time beating well after each addition.
  3. Spread onto a big piece of waxed paper about 12"x18" and make a rectangle about 10"x15".
  4. Spread peanut butter over top of sugar potato mixture.
  5. Roll up like as a jelly roll.
  6. Put in fridge for about an hour then cut into slices.
  7. Store in fridge.

We make this at Christmas and I color the potatoes so they look pretty when cut. We use the same ingrdients you do but my recipe was taught to me by my grandma sowe had no measurements. Also, we let ours set out at room temp for 15 min to set up and then cut.


Tell you the truth...i don't like too much of potatoes, but this is a sure dish for me to try...Thankssss
