Poached Tilapia in Dill and Caper Sauce

- 2 lbs Tilapia or other delicate white fish shopping list
- 3 lemon slices shopping list
- 1 bay leaf shopping list
- 2 Tbs butter shopping list
- 4 tsp flour shopping list
- 2 tsp fresh dill, snipped shopping list
- 2 tsp capers shopping list
- juice of 1/2 lemon, shopping list
- 1 egg yolk, slightly beaten shopping list
How to make it
- In a fish poacher or roasting pan with wire rack, fill with water to "just" reach the rack. Remove rack and coat with nonstick cooking spray.
- Add lemon and bayleaf to water.
- Place pan on burner(s) and bring to boil. Then reduce heat to simmer.
- Place fish on rack and place in pan. Cover and cook till done. Fish should be tender and flake easily with a fork. 5-15 min depending on thickness of fish.
- Remove fish to serving plater, cover and keep warm.
- Strain 1 cup of broth.
- In small saucepan melt butter, stir in flour and dill. Add broth, lemon, and capers. Cook, stirring until thickened and bubbly.
- Remove about 1/2 cup of sauce and pour slowly into egg yolk, stirring quickly, Return egg mixture into saucepan. Cook and stir about a minute more. Pour sauce over fish.
