Tender delicately cooked fish in a creamy dill and caper sauce. Sauce is subtle enough to not over power a delicate white fish, but flavorful enough to make it something special.

  • 3 lemon slices
  • 1 bay leaf

  • 4 tsp flour
  • 2 tsp fresh dill, snipped
  • 2 tsp capers
  • Juice of 1/2 lemon,
  • 1 egg yolk, slightly beaten

  5. Remove fish to serving plater, cover and keep warm.
  6. Strain 1 cup of broth.
  7. In small saucepan melt butter, stir in flour and dill. Add broth, lemon, and capers. Cook, stirring until thickened and bubbly.
  8. Remove about 1/2 cup of sauce and pour slowly into egg yolk, stirring quickly, Return egg mixture into saucepan. Cook and stir about a minute more. Pour sauce over fish.
