How to make it

  • In a fish poacher or roasting pan with wire rack, fill with water to "just" reach the rack. Remove rack and coat with nonstick cooking spray.
  • Add lemon and bayleaf to water.
  • Place pan on burner(s) and bring to boil. Then reduce heat to simmer.
  • Place fish on rack and place in pan. Cover and cook till done. Fish should be tender and flake easily with a fork. 5-15 min depending on thickness of fish.
  • Remove fish to serving plater, cover and keep warm.
  • Strain 1 cup of broth.
  • In small saucepan melt butter, stir in flour and dill. Add broth, lemon, and capers. Cook, stirring until thickened and bubbly.
  • Remove about 1/2 cup of sauce and pour slowly into egg yolk, stirring quickly, Return egg mixture into saucepan. Cook and stir about a minute more. Pour sauce over fish.
