Sauted Spinach with Pine Nuts

- 2 tablespoons pine nuts shopping list
- 1 teaspoon olive oil shopping list
- 2 pounds spinach shopping list
- 1/4 cup raisins or currants shopping list
- 1 tablespoon balsamic vinegar shopping list
- salt to taste shopping list
- Freshly ground black pepper shopping list
How to make it
- Wash the spinach and shake off any excess water. Remove any tough stems.
- Place the raisins in a small bowl and add 1/2 cup hot water. Let sit until the raisins plump, about 5 minutes. Drain and pat dry.
- Heat a heavy bottomed pan over medium heat and toast the pine nuts while shaking the pan to evenly brown them.
- Add the oil to the pan and warm.
- Add the spinach and raisins and toss quickly until the greens are just wilted. Sprinkle the balsamic vinegar over the greens and stir until warmed, about 30 seconds. Adjust the salt and pepper to taste.
- Divide evenly on 4 warmed plates.

I am so very very fond of sauted spinach. I'm glad I opened this recipe up. I have never tried this using raisens before but I will next time. The pinenuts and garlic are old friends. I usually use oil with hot peppers for the saute.
