How to make it

  • Heat oil in a large frying pan
  • Add onion rings and fry gently over a low heat for 10 minutes or until limp and transluscent, stirring frequently
  • Add green pepper to pan and fry gently 2 minutes
  • In a small bowl combine the vinegar, salt and pepper, sugar, oregano and mustard.
  • Add to pan an cook stirring for 3 minutes
  • Sprinkle cheese over surface of dish.
  • Cover pan with lid and remove from heat.
  • Leave to stand for 1 minute.
  • Serve Hot.
  • Good serve with meat, poultry or fish, or as a filling for an omelette
