Ingredients

1/2 cup Crisco

1 1/2 cups white granulated sugar

2 eggs(room temperature)

2 or 3 small EXTRA RIPE bananas(at room temperature)

1 1/2 teaspoons cinnamon

1 teaspoon vanilla

2 cups all purpose plain flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup buttermilk(room temperature)

(**if no buttermilk, use regular milk with a teaspoon of vinegar**)

3/4 cup chopped toasted nuts(flour nuts so they don't sink to the bottom)

Directions

Preheat oven to 350 degrees F.

Grease & flour cake pans or loaf pans. Line with wax paper.

Use 2 - 9inch pans for (25 to 30 minutes)

1- 8 1/2 X 12 inch pan (30 minutes)

2 - loaf pans(30 - 45 minutes)

Cream Crisco & sugar in mixer until light & fluffy.

Add eggs beating well.

Place bananas in a bowl with cinnamon and smash up real good.

Add bananas, cinnamon & vanilla to mixing bowl ingredients.

Sift the flour, baking soda, baking powder, and salt together.

Add flour mixture alternately with buttermilk, ending with flour.

Fold in the nuts, mixing well

Pour into pans and set in preheated oven.

Bake loafs for about 30 - 45 minutes.

Ovens vary.

Yep, that's the only way to get a good moist banana bread or cake, your bananas have to be very very ripe. I had a cousin that owned a bakery, but actually that was my mom's secret to her cakes and breads.
