Baby Angel Food Cake Recipe

Ingredients
  • 6 "Free-Range" egg whites
  • half cup "unbleached, or organic" all purpose flour
  • quarter cup "organic ground cane sugar"
  • teaspoon of honey (optional)
  • three fourths tsp. cream of tartar
  • 1 tsp. almond extract
  • one half cup organic sugar.

Directions
  1. Heat oven to 350 degrees
  2. Sift flour and quarter cup sugar together
  3. Beat egg whites, cream of tarter, and almond extract until foamy
  4. Add one half cup sugar gradually
  5. Continue beating until meringue forms stiff, glossy peaks
  6. Sift flour mixture, one quarter at a time, over meringue; fold in
  7. Push batter into ungreased 9x5x3-inch loaf pan
  8. Cut through batter with knife to prevent air pockets
  9. Bake 30 to 35 minutes or until cake tests done
  10. Invert pan by setting corners on other pans or custard cups;
  11. cool completely
  12. remove from pan
