cheddar chive muffins

- 1-1/4 cup of milk shopping list
- 3/4 cup mashed potato flakes shopping list
- 1 egg shopping list
- 1/3 cup vegetable oil shopping list
- 1 cup (4 ounces) shredded cheddar cheese shopping list
- 1-2/3 cups all-purpose flour shopping list
- 3 tablespoons sugar shopping list
- 2 tablespoons snipped chives shopping list
- 1 tablespoon dried parsley flakes shopping list
- 2 teaspoons baking powder shopping list
- 1 teaspoon salt shopping list
How to make it
- In a small saucepan, bring the milk to a boil, then remove from heat
- stir in potato flakes. Let stand for 2 minutes and then whip with a fork until smooth
- cool slightly.
- Transfer to a large bowl.
- Beat in egg, oil and cheese.
- Combine the flour, sugar, chives, parsley, baking powder and salt in another large bowl
- stir into potato mixture just until moistened (batter will be thick).
- Fill greased muffin cups three-fourths full.
- Bake at 400° for 20-25 minutes or until a toothpick comes out clean.
- Cool for 5 minutes; remove from pan to a wire rack.
