This makes for a hearty breakfast and can be made with almost any sausage. Chaurice is almost impossible to find anywhere in my region, so I make my own.

Is this what we call Chariso here? Remember this is N.O. and we don't speak the King's english. Sounds wonderful.

We can get Portuguese Chourico here in New England just about everywhere! Going to try this one!

Chaurice (pronounced shore-EESE) is a fresh Creole Sausage, similar and probably derived from the Spanish Chorizo, without the curing process. Is the Portuguese Chourico the same thing? You are very fortunate to have access to this wonderful sausage. I understand that Portuguese Lingucia sausage is readily available in New England and is commonly used on pizza. Is that right? Thanks for your interest in my recipe. Enjoy!!!
