How to make it

  • Heat the oil in a cast iron skillet
  • Lightly brown the onion
  • Add the tomatoes and garlic, stirring
  • Add the sausage, cover and simmer for about 5 minutes
  • Sprinkle with salt & pepper
  • Add the boiling water
  • Cover and simmer for 20 minutes
  • Great with eggs for breakfast!

    Chaurice (pronounced shore-EESE) is a fresh Creole Sausage, similar and probably derived from the Spanish Chorizo, without the curing process. Is the Portuguese Chourico the same thing? You are very fortunate to have access to this wonderful sausage. I understand that Portuguese Lingucia sausage is readily available in New England and is commonly used on pizza. Is that right? Thanks for your interest in my recipe. Enjoy!!!
