Got this from another group and wanted to share here..Great for left over ham...

Ingredients
  • 1 cup peeled cubed cooked potatoes
  • 1 cup cubed cooked smoked ham
  • 1 cup diced hard cooked egg (3 eggs)
  • 1 cup cubed apple
  • 1 cup cubed peeled cucumber
  • 1 cup diced onion ( I use 1/2 cup)
  • 1 cup mayonnaise type salad dressing
  • 1/4 tsp each salt and pepper
  • Chopped parsley for garnish

Directions
  1. In a bowl, mix together all ingredients except parsley. Refrigerate, covered, 2
  2. hours. Garnish with parsley. MAKES 6 SERVINGS.*
