Ingredients

How to make it

  • The cooking time is a rough estimate for a baked pie shell.
  • Bake and cool a pastry shell.
  • Fill with 2 cups of fresh blueberries.
  • Cook 2 cups of blueberries with the water, cornstarch, sugar, lemon juice, and salt.
  • Cook until the ingredients have thickened.
  • Remove from the heat and add the butter.
  • Cool.
  • When the berry mixture is cold, spoon over the other berries in the baked pastry shell.
  • Chill until ready to serve.
  • The pie is great with fresh whipped cream.

We have a blueberry farm near us and so far this summer I've picked over 20 pounds! (at $1.00 a lb. not bad!)
They are fabulous, so I'm getting ready to make blueberry pie and blueberry Jam! I already started a batch of blueberry brandy. Made with regular brandy, smushed blueberries, time... then add sugar etc. Will be ready in about 5 months but well worth the wait!
But for now, it's time to go make my blueberry pie! Thanks for the receipe!

HI Debra :) Just noticed that rating....how could ANYONE give a low rating on a homemade blueberry pie??? It just isn't fathomable :) [BUMP].
I laughed at your comment about blueberries 'over there'...to this day my husband won't admit that he likes them, cause "any food that is blue in colour can't be good for you"...or so he says :)

Please disregard the anonymous rating that I received from someone who either didn't make it correctly or didn't bother making it at all. If the recipe was so lousy the person should have commented on my page or sent me a note.

I'm going to try this for New Recipe Tuesday this coming week. Curious about how it would be with a top crust.

Also, I have to use frozen blueberries. Any sugestions on any alterations. I just can't afford fresh blueberries--not four cups of them.

I'm using the blueberries I bought on sale to make this. I'll make the filling ahead and then bake it this coming weekend.

Hi! I love blueberries but they are quite expensive here. As a result we have gotten a blueberry plant which I have in a pot. The soil isn't sandy enough here so that is the reason we got it potted. I am sure you will love this pie.
