Spicy Pork Roast Rub Recipe
This is a slightly moist "dry rub" that is excellent treatment for a pork roast. Sufficient rub for a 4-5 lb roast.

Ingredients
  • 5 Cloves Garlic, chopped
  • 1 T Olive Oil
  • The Dry Ingredients
  • 3 tsp Salt
  • 2 tsp Ground Pepper
  • 2 tsp Coleman's Dry Mustard
  • 1.5 tsp Thyme
  • 1 tsp Ground Cumin
  • 1 tsp Ground Cardamom

Directions
  1. The Rub
  2. Combine the dry ingredients
  3. Add the garlic, combine
  4. Add the olive oil and mix until rub is uniformly moistened
  5. The Roast
  6. Cut several deep pockets in the roast and insert about half of the rub
  7. Apply the rest of the rub to the top and sides of the roast
  8. Let stand in the refrigerator for several hours
  9. Roast in a slow to medium oven until internal temperature is 160 degrees
