How to make it

  • The Rub
  • Combine the dry ingredients
  • Add the garlic, combine
  • Add the olive oil and mix until rub is uniformly moistened
  • The Roast
  • Cut several deep pockets in the roast and insert about half of the rub
  • Apply the rest of the rub to the top and sides of the roast
  • Let stand in the refrigerator for several hours
  • Roast in a slow to medium oven until internal temperature is 160 degrees
