I make this quick sandwich whenever I'm hungry and didn't have time to make a proper meal. I usually just throw together the vingarette by sight/taste

Ingredients
  • 2 slices of bread (sourdough preferred)
  • 1 roma tomato, sliced
  • 2 slices mozzarella cheese
  • handful fresh basil leaves
  • 1 TBSP Dijon brown mustard
  • 1 TBSP balsamic vinegar
  • 1/4 tsp red wine vinegar
  • 1/4 tsp pepper

Directions
  1. Note: if desired (and it usually tastes best) - toast the bread in toaster.
  2. Layer the tomatoes on one slice of bread/toast, then the cheese, concluding with basil on top.
  3. In a small container, mix together the mustard, vinegar (both), and pepper.
  4. You may pour or use a spoon to sprinkle over open sandwich.
  5. Put other piece of bread on top.
  6. Cut in half.
  7. Bon appetit!
