How to make it

  • Heat oil in pan, medium hot
  • Dust steaks with salt and pepper
  • Put steaks into pan and seal, set aside to rest
  • Add shallots and bacon to pan with tomato paste
  • Reduce heat
  • Simmer and reduce sauce
  • Add flour to chicken base sauce
  • Add red wine and chicken stock with bay leaves and seasoning
  • Bring to boil, then simmer to sauce consistency
  • Add a little balsamic to the finished sauce
  • Reduce the sauce heat to a slow simmer and add steaks back to sauce
  • Cook to desired doneness

    Love the sauce, crazy about those shallots and red wine reduced sauce is delicious. Improve the flavor of any cut of meat. Similar to a Marchand De Vin prep from many moons ago. Thanks for the post.
