Steak with Red Wine Shallot Sauce

- 4 medallions upper cut steak shopping list
- salt and pepper shopping list
- oil shopping list
- 1 dozen peeled shallots (scallions), halved shopping list
- 2 slices bacon, chopped shopping list
- 1 tblspn tomato paste shopping list
- 1 tblspn corn flour shopping list
- 2 cups red wine shopping list
- 2 cups chicken stock shopping list
- 2-3 bay leaves shopping list
- seasoning shopping list
- balsaminc vinegar shopping list
How to make it
- Heat oil in pan, medium hot
- Dust steaks with salt and pepper
- Put steaks into pan and seal, set aside to rest
- Add shallots and bacon to pan with tomato paste
- Reduce heat
- Simmer and reduce sauce
- Add flour to chicken base sauce
- Add red wine and chicken stock with bay leaves and seasoning
- Bring to boil, then simmer to sauce consistency
- Add a little balsamic to the finished sauce
- Reduce the sauce heat to a slow simmer and add steaks back to sauce
- Cook to desired doneness

Love the sauce, crazy about those shallots and red wine reduced sauce is delicious. Improve the flavor of any cut of meat. Similar to a Marchand De Vin prep from many moons ago. Thanks for the post.
