Steak With Red Wine Shallot Sauce Recipe

Ingredients
  • 4 medallions upper cut steak
  • salt and pepper
  • oil
  • 1 dozen peeled shallots (scallions), halved
  • 2 slices bacon, chopped
  • 1 tblspn tomato paste
  • 1 tblspn corn flour
  • 2 cups red wine
  • 2 cups chicken stock
  • 2-3 bay leaves
  • seasoning
  • balsaminc vinegar

Directions
  1. Heat oil in pan, medium hot
  2. Dust steaks with salt and pepper
  3. Put steaks into pan and seal, set aside to rest
  4. Add shallots and bacon to pan with tomato paste
  5. Reduce heat
  6. Simmer and reduce sauce
  7. Add flour to chicken base sauce
  8. Add red wine and chicken stock with bay leaves and seasoning
  9. Bring to boil, then simmer to sauce consistency
  10. Add a little balsamic to the finished sauce
  11. Reduce the sauce heat to a slow simmer and add steaks back to sauce
  12. Cook to desired doneness

Love the sauce, crazy about those shallots and red wine reduced sauce is delicious. Improve the flavor of any cut of meat. Similar to a Marchand De Vin prep from many moons ago. Thanks for the post.
