QUICK EASY AND CREAMY POTATO SOUP Recipe
A quick potato soup that tastes great when you don't want to wait all day for the crock pot. I serve with my Mammma's Cornbread recipe.

Ingredients
  • 1 1/2 C. water
  • 6 medium potatoes, peeled and quartered
  • 1/2 C. sliced celery
  • 1/4 C. water
  • 1 C. milk
  • 3/4 tsp. salt
  • 1/2 C. chopped onions

Directions
  1. Heat 1 1/2 cups water to boiling in 3-quart saucepan.
  2. Add potatoes and celery.
  3. Cover and heat to boiling; reduce heat.
  4. Simmer about 25 minutes or until potatoes are tender.
  5. Drain liquid into blender.
  6. Remove 3 cups cooked potatoes from saucepan; place in blender with liquid. Add 1/4 cup water.
  7. Cover and blend about 1 minute until smooth.
  8. Stir pureed potatoes back into saucepan.
  9. Stir in remaining ingredients; heat over medium heat, stirring occasionally, until hot.

Great recipe! I love soups so this is just the thing for me. I think this would be great garnished with cheese.

I think I'll give this a try this upcoming week. I have to say it loks faster than the way I've been making it. . .but I'd have to top with cheese (like cookinggood) and bacon :-)
