  • 1-3/4 cups all-purpose cake
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup sugar
  • 1 (3.5-oz.) vanilla instant pudding mix
  • 1/4 tsp. vegetable oil
  • 4 large eggs
  • 3/4 cup peach schnapps
  • 1/2 cup fresh squeezed orange juice from two oranges
  • 1 Tbsp. orange zest
  • 1/2 tsp. Pure orange extract
  • Glaze:
  • 1 cup confectioners sugar
  • 4 Tbsp. orange juice (fresh squeeze)
  • 2 Tbsp. peach schnapps

Directions
  1. Preheat the oven to 350*F. Grease and flour a 12 cup Bundt pan, set aside.
  2. Place the flour, baking powder, baking soda, salt, sugar, pudding mix, peach schnapps, oil, orange juice, orange zest, eggs and orange extract in a large mixing bowl
  3. Blend with a heavy duty electric mixer on low speed for 1 minute, increase speed to medium and beat for 2 minutes.
  4. The batter should be thick and smooth. Pour the batter into the Bundt pan.
  5. Bake cake until it is golden brown and springs back when lightly touched for 50 minutes.
  6. Remove cake from the oven and cool on a wire rack for 20 minutes.
  7. Running a sharp knife around edge of cake and invert it onto a serving platter.
  8. Glaze:
  9. Place sugar, orange juice and peach schnapps in a small mixing bowl ans stir well blended.
  10. Poke holes in the top of cake with a wooden skewer. Spoon the glaze over the warm cake, allowing it to seep into the holes and drizzle down the sides of the cake.
  11. Cool before serving

This looks fabulous! I love Orange in anything and often add the zest in different baked goods. Bonus is we have some Peach Schnapps just hanging around doing nothing. One question though, for the oil, is it really just 1/4 tsp or should it be 1/4 cup? I'm thinking it's a typo, but I've been wrong before. Thanks for posting.
