Lemon Carrot Teacake

- Cake: shopping list
- 1 1/2 cups all-purpose flour shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 stick butter shopping list
- 1 cup sugar shopping list
- 1 egg shopping list
- 1 tsp vanilla shopping list
- 1/2 cup milk shopping list
- 1/2 cup carrot, finely shredded shopping list
- 1 Tbsp lemon juice shopping list
- Frosting: shopping list
- 1 large bar cream cheese (8 ounces), softened shopping list
- 1/2 cup confectioner's powdered sugar shopping list
- 2 Tbsp butter, softened shopping list
- 1/2 tsp vanilla shopping list
- 1 Tbsp lemon juice shopping list
- 1 tsp grated lemon peel shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease 9 inch square or 7x11 baking pan.
- Combine and set aside flour, baking soda and salt.
- Cream the stick of butter and the sugar until fluffy.
- Add the egg and vanilla and beat well.
- Add the flour mixture alternately with the milk, beginning and ending with flour.
- Beat until well blended but do not overbeat.
- Add the shredded carrot and lemon peel and blend in but do not overbeat.
- Pour into prepared pan.
- Bake 40 minutes or until a toothpick inserted into the middle comes out clean.
- Remove from oven and cool for 10 minutes.
- Remove from pan and cool completely.
- For frosting, beat cream cheese and 2 tbsp butter until it is smooth and fluffy.
- Add confectioner's sugar, lemon juice, vanilla and lemon peel.
- Beat until smooth.
- Frost cooled cake.
- Garnish with strips of orange peel or as desired.
