Ingredients

4oz Peasant bread croutons (or any croutons)

2TBLS Flour

1/2tsp Salt

1/2tsp Black Pepper

4 bone-in Chicken breasts

2tsp Olive oil

4 Shallot, diced

1/2lb Mushrooms, Quartered

4 clove Garlic, minced

1/2c Dry red wine

1c fresh chopped Tomato

2 TBLS Tomato paste

1/2c Chicken Broth

1/2tsp Dried Rosemary

Directions

Combine Flour, 1/2 Salt, and 1/2 Pepper. Dredge Chicken in the flour mixture.

In large skillet, heat the oil over medium heat. Add the chicken & cook until golden brown. About 2min a side. Move Chicken to plate.

Add Mushrooms, Garlic, & Shallots to pan cook 5min. Add wine and reduce by half. Add tomato, Broth, Tomato paste, and remaining salt and pepper. Return Chicken and bring to a boil. Lower heat and simmer 20 min. Serve to plate and cover with croutons
