Ingredients
  • 3/4 cup firmily packed brown sugar
  • 1/2 cup margarine or butter, softened
  • 1 teaspoon vanilla
  • 1 egg
  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup quick-cooking rolled oats
  • 1/2 dried apricots, chopped
  • 1/3 cup coconut
  • 1/3 cup wheat germ
  • 1 cup cornflakes, coursly crushed

Directions
  1. Heat oven to 350 degrees.
  2. Spray cookie sheets with spray oil.
  3. In a large bowl, beat brown sugar and margarine until light and fluffy. Add vanilla and egg; blend well.
  4. Stir in flour, baking soda, salt, oats, apricots, coconuts and wheat germ; mix well. Stir in cereal.
  5. Drop dough by rounded teaspoonfuls onto cookie sheets.
  6. Bake for 8 - 10 minutes or until light golden brown.
  7. Cool for 1 minute; remove from cookie sheet.
