Angel Food Cake with Lime Curd and Blackberries

                    - 1 angelfood cake mix shopping list
- 2 T lime zest, minced shopping list
- 10 eggs, beaten shopping list
- 1 c fresh lime juice shopping list
- 1 1/3 c sugar shopping list
- 1 c or 2 sticks unsalted butter, softened shopping list
- 1 pt of fresh blackberries shopping list
- 1 c sugar shopping list
- 2 c water shopping list
How to make it 
                    - Mix cake according to directions folding in 1 T of the lime zest before baking. Cool
- Lime Curd: melt butter in saucepan, add 1 c sugar, lime juice, and zest. Cook over low heat to dissolve sugar. Pour a little of the lime mixture into the beaten eggs, whisk and pour egg mixture back into pan; cook, stirring constantly till mixture thickens and coats the back of a spoon . Cool.
- Blackberry Compote: Combine 1/2 pt of the berries with the sugar and water in small saucepan. Bring to a boil and cook until sugar is dissolved and mixture thickens slightly. Remove from heat and cool. Puree cooled berry mixture in food processor. Strain through a fine-meshed sieve. Discard seeds. Place remaining berries in a dish. Pour berry puree over berries. Let sit for 30 min.
- To serve: place a slice of cake on a dessert plate. Spoon on lime
- curd, spoon blackberry compote over top. Garnish with a fresh mint sprig.
