How to make it

  • Cook the noodles in boiling salted water until al dente. Rinse with cold water, drain, and dry.
  • To prepare the dressing, stir together the rice vinegar, tamari, and miso. Whisk in the sesame oil, sesame seeds, and red pepper flakes.
  • Toss the carrots and green onions in the dressing.
  • Pour the dressing over the pasta; toss, and adjust seasoning with salt and pepper.
