Marzipan Bars Recipe
A yummy marzipan flavored bar with colorful cake swirl on pie crust. Very pretty for Spring.

Ingredients
  • pie crust
  • 1/4 c raspberry jam
  • 1/2 c butter
  • 2/3 c sugar
  • 2 eggs
  • 2/3 c rice flour or cake flour
  • 1/4 t salt
  • red food color
  • green food color
  • Icing
  • 1 1/2 c powdered sugar
  • 3 T butter
  • 1 t almond flavoring
  • 1 T plus 2 t milk
  • sliced almonds

Directions
  1. Roll out pie crust and place in bottom of 9x9 inch ungreased pan. Spread with jam.
  2. Beat butter and sugar together in bowl. Add eggs one at a time and beat after each. When fluffy, stir in the rice or cake flour and salt.
  3. Divide batter into two equal portions. Tint one portion pink and the other green.
  4. Place on top of jam layer by alternating teaspoons of each color. This will look like a checkerboard when finished.
  5. Bake at 375 degrees for 35 minutes.
  6. Do not brown.
  7. Batter will flatten as it bakes.
  8. Cool. Frost. Enjoy!
  9. May be doubled and baked in 16x12x1 jelly roll pan
