How to make it

  • Roll out pie crust and place in bottom of 9x9 inch ungreased pan. Spread with jam.
  • Beat butter and sugar together in bowl. Add eggs one at a time and beat after each. When fluffy, stir in the rice or cake flour and salt.
  • Divide batter into two equal portions. Tint one portion pink and the other green.
  • Place on top of jam layer by alternating teaspoons of each color. This will look like a checkerboard when finished.
  • Bake at 375 degrees for 35 minutes.
  • Do not brown.
  • Batter will flatten as it bakes.
  • Cool. Frost. Enjoy!
  • May be doubled and baked in 16x12x1 jelly roll pan
