  • 4 large Portobello mushrooms (each about 5 inches across)
  • 3/4 cup shredded, part-skim Mozzarella cheese, divided
  • 1/3 cup dry bread crumbs
  • 1/3 cup chopped walnuts
  • 1/3 cup minced onion
  • 1/3 cup golden raisins (optional)
  • 3 tablespoons grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg, lightly beaten
  • 2 tablespoons vegetable broth

Directions
  1. Remove stems from the mushrooms (discard or save for another use); set caps aside.
  2. In a small bowl, combine 1/4 cup Mozzarella, breadcrumbs, nuts, onions, raisins, Parmesan, salt and pepper. Stir in egg and broth until blended.
  3. Spoon the cheese mixture onto the mushroom caps.
  4. Sprinkle with the remaining Mozzarella.
  5. Place in a 15" by 10" by 1" baking pan, coated with cooking spray.
  6. Bake, uncovered, at 350-degrees F., for 20 to 25 minutes, or until the mushrooms are tender.
  7. One mushroom equals 221 calories.
