How to make it
- Heat oil in a skillet.
- Add tomatoes and green onion. Stir fry until the liquid from the tomatoe evaporates. Add some sugar and soya. The sugar brings out the sweetness of the tomatoes.
- Add the egg tofu. Gently heat tofu through turning only once. There will be a slight golden colour to the tofu's edge but it will soft and fluffy inside.
- Break the eggs, beat and add to the skillet. Turn out on plate when eggs reached desired doneness. Top with some croasely grounded pepper.
