How to make it

  • Heat oil in a skillet.
  • Add tomatoes and green onion. Stir fry until the liquid from the tomatoe evaporates. Add some sugar and soya. The sugar brings out the sweetness of the tomatoes.
  • Add the egg tofu. Gently heat tofu through turning only once. There will be a slight golden colour to the tofu's edge but it will soft and fluffy inside.
  • Break the eggs, beat and add to the skillet. Turn out on plate when eggs reached desired doneness. Top with some croasely grounded pepper.

    Hi, egg tofu has similar texture to silken tofu maybe slightly firmer. It comes in a cylinderical tube and can be found in most asian grocers. Feel free to try a different tofu with this recipe. Generally firm tofus are for longer cooking and braising. Silken is often used in dessert recipes and quick cook. Cheers!
