Potato Pizza Recipe
this is my variety of potato pizza - in lent i make it without any meat, in other times i cook chopped smoked sausage or ham together with sliced leek and onions, use that instead of the zucchini-tomato-mixture

Ingredients
  • 2 onions
  • butter
  • potatoes, about 1000 gr
  • crème fraîche
  • corn starch, about 3 TBSP
  • 4 eggs
  • frshly grated cheeses: i've used
  • :gouda, emmentaler, cheddar
  • salt and pepper
  • paprikapowder
  • 4 zucchini, medium sized
  • ,2-4 garlic cloves
  • tomatoes, 5 medium sized

Directions
  1. peel, slice and chop onions
  2. cook in butter in skillet until translucent
  3. peel, wash potatoes
  4. use vegetable grater and grate
  5. preheat oven to 200° CENTIGRADE
  6. mix crème fraîche with corn starch,
  7. eggs and onions and potatoes
  8. season with sal (careful!),freshly ground white pepper and paprika powder
  9. spread onto greased cookie sheet and bake for about 30 to 35 minutes.
  10. wash, clean, grate zucchini, cook in some butter in skilled, add garlic cloves, mashed
  11. skin tomatoes, removing inside kernels
  12. cut into small pieces
  13. mix with zucchini, season with pepper, salt
  14. (if mixture es very wet, press some of the juice out of mixture)
  15. spread onto potatoes
  16. (after removing baking sheet from oven, naturally *g*)
  17. sprinkle generously with cheese
  18. bake for another 25 to 30 minutes.
  19. remove from oven. ahhhh! this goes very well with a beer (i drink non-alcoholic pils from a nearby brewery and i must say, i do not miss the alcohol but like the taste).
  20. i have also made this using frutti di mare, really all kinds of mixtures are possible.
  21. i've made this because i cannot eat anything containing gluten. but for those of you who can eat 'normal' pizza it ought to taste good, too. my family and friends liked it.
