How to make it

  • Bring broth to a boil.
  • Add zucchini, garlic and carrots. Cook 3 minutes.
  • Stir in cabbage, ginger, lime zest and juice, chili, and noodles.
  • Cook until noodles are al dente, about 4 minutes.
  • Stir in shrimp and heat through.
  • Serve hot.

    Soba noodles are made with buckwheat flour, you can usually find them in Asian stores. If you can't find them whole-wheat spaghetti works just as well!
