Ingredients

1 lb Mutton, lean finely minced

¾ tsp. Corianders

1 tsp. Ground turmeric

½ tsp. Gound ginger

½ tsp. Ground chillies

½ tsp. Ground poppy seeds

Pinch of.. ( each) cinnamon, cardamon

1 tsp shreded coconut

Salt and pepper

2 onions chopped

2 garlic, finely minced

3 tbsp lemon juice .

Directions

Make a mixture of met and spices list above.

In a stew pan heat the ghee and fry lightly th onions and the garlic.

Dd this to the above mixure, stir well and cookslowly for about 10 -15 min. Turn out on a platter, let cool, and then, either grind it or pound it to a past with a squeeze of lemon juice.

Form into oval cutlets and fry in the usual way, or press onto metal sewers and grill, basting well.
