How to make it

  • In a large saute pan, add the oil and shallots over medium heat and cook shallots until they are transparent and tender, about 5 minutes.
  • Add the peas and warm through.
  • Next add the heavy cream and Parmesan and continue to cook until all of the cheese has been incorporated.
  • Adjust seasoning just before serving and, if you like, sprinkle with chopped fresh mint.

    Made these tonight as I had some peas I wanted to serve with a shrimp dish. Had some great Parmesan cheese to use AND a left over shallot, as well as fresh mint, so this was a given...made half a batch, added plenty of fresh ground pepper and my favorite season salt blend, and they were great. Perfect with a simple shrimp over a nutty brown rice. I added a photo...if you wanna remove it, I understand. Thanks for the recipe! :)
