How to make it

  • In large pan/pot, bring broth, rice, and lemon zest to a boil, then reduce to simmer for 15 minutes.
  • Remove 2 cups of broth and rice to a blender, add tofu, and blend (carefully, as it's hot) till smooth.
  • Return to pot, whisking it into the broth and rice soup in the pot. Whisk in dill and lemon juice. Heat through, and serve.
