Greek Lemon Soup

- 6 cups Vegitable broth shopping list
- 2 cups cooked rice shopping list
- zest of one lemon shopping list
- 12 oz silken tofu shopping list
- 2 Tbs dill, snipped shopping list
- 1/4 cup lemon juice shopping list
- white pepper to taste shopping list
How to make it
- In large pan/pot, bring broth, rice, and lemon zest to a boil, then reduce to simmer for 15 minutes.
- Remove 2 cups of broth and rice to a blender, add tofu, and blend (carefully, as it's hot) till smooth.
- Return to pot, whisking it into the broth and rice soup in the pot. Whisk in dill and lemon juice. Heat through, and serve.
