Beef Stuffed Zucchini

- 1-1/2 pounds lean ground beef cooked shopping list
- 1 white onion chopped shopping list
- 1 green bell pepper chopped shopping list
- 1/2 teaspoon ground jalapeno pepper shopping list
- 1-1/4 cups soft bread crumbs shopping list
- 1 egg beaten shopping list
- 1 tablespoon parsley shopping list
- 1 teaspoon basil shopping list
- 1 teaspoon italian seasoning shopping list
- 1 teaspoon salt shopping list
- 16 ounces tomato sauce shopping list
- 2 tomatoes coarsely chopped shopping list
- 5 medium zucchini shopping list
- 2 cups shredded mozzarella cheese shopping list
How to make it
- Combine all ingredients except zucchini and cheese then mix well.
- Halve zucchini lengthwise and scoop out seeds.
- Fill with meat mixture then place in baking dish and bake uncovered at 375 for 45 minutes.
- During last 5 minutes sprinkle with cheese and return to oven until cheese is melted.
