How to make it

  • 1. In a small saucepan over medium heat, mix pineapple juice, brown sugar, and soy sauce. Remove from heat just before the mixture comes to a boil.
  • 2. Place chicken tenders in a medium bowl. Cover with the pineapple marinade, and refrigerate for at least 30 minutes.
  • 3. Preheat grill for medium heat. Thread chicken lengthwise onto wooden skewers.
  • 4. Lightly oil the grill grate. Grill chicken tenders 5 minutes per side, or until juices run clear. They cook quickly, so watch them closely.

    I'm going to assume that you let the marinade cool before pouring over the chicken, otherwise I see a problem with bacteria growth. Other than that, look good and easy. I see some kabobs in the future.

    This is a great summertime out on the grill recipe. Pretty healthy sounding too. I plan on trying this out as soon as it warms up to use our outdoor grill.
    Then again I may just use my George Foreman. Either way great post!

    I made this last week. I used tamari instead of soy sauce and cut my chicken into lil pieces (easier for my lil one to eat!) alternated wtih pineapple and it was SO GOOD! We had some left over and they were even better the next day for lunch! I do think they'll be better as tenders so we're gonna try again this weekend! :D
