Leek and Bacon FLan

- 9oz /275g of white or wholemeal shortcrust pastry, or 1 ready-made pie crust (make sure it does not contain hydrogenated fat) shopping list
- 2oz/50g butter shopping list
- 4 strips of bacon, cut into small pieces shopping list
- 16oz/450g leeks, sliced into small rings shopping list
- 3 eggs shopping list
- 6oz/150ml 2% milk shopping list
- 1tsp Dijon mustard shopping list
- 4oz/120g grated Compte or gruyere cheese (or white cheddar) shopping list
- Freshly ground black pepper shopping list
How to make it
- Preheat oven to 400f/190C/Gas Mark 5
- Roll out pastry and line a metal or ceramic quiche pan. Place baking parchment over the pastry and weigh it down with baking beans or a slightly smaller oven dish. Bake for 8-10 minutes or until the pastry turns a pale golden brown. Remove from oven.
- In a frying pan melt the butter and fry the bacon until crisp, then add the leek slices and fry until soft.
- Remove from heat and spread the mixture evenly in the piecrust.
- Beat the eggs and stir in the milk, mustard and cheese. Season with pepper to taste.
- Pour egg mixture over the bacon and leek.
- Bake for 30 minutes or until the top has turned golden brown.
- Cool and slice into 6-8 pieces.
- Serve with a salad, or wrap some up to take to the office for lunch!

Okay, hon - anything that involves leeks, bacon and cheese has my name written all over it. I cannot make this fast enough...must get the missing bacon and leeks tomorrow...woo hoo!
