Ingredients

9oz /275g of white or wholemeal shortcrust pastry, or 1 ready-made pie crust (make sure it does not contain hydrogenated fat)

2oz/50g butter

4 strips of bacon, cut into small pieces

16oz/450g leeks, sliced into small rings

3 eggs

6oz/150ml 2% milk

1tsp dijon mustard

4oz/120g grated Compte or Gruyere cheese (or white cheddar)

Freshly ground black pepper

Directions

Preheat oven to 400f/190C/Gas Mark 5

Roll out pastry and line a metal or ceramic quiche pan. Place baking parchment over the pastry and weigh it down with baking beans or a slightly smaller oven dish. Bake for 8-10 minutes or until the pastry turns a pale golden brown. Remove from oven.

In a frying pan melt the butter and fry the bacon until crisp, then add the leek slices and fry until soft.

Remove from heat and spread the mixture evenly in the piecrust.

Beat the eggs and stir in the milk, mustard and cheese. Season with pepper to taste.

Pour egg mixture over the bacon and leek.

Bake for 30 minutes or until the top has turned golden brown.

Cool and slice into 6-8 pieces.

Serve with a salad, or wrap some up to take to the office for lunch!
