How to make it

  • Preheat oven to 400f/190C/Gas Mark 5
  • Roll out pastry and line a metal or ceramic quiche pan. Place baking parchment over the pastry and weigh it down with baking beans or a slightly smaller oven dish. Bake for 8-10 minutes or until the pastry turns a pale golden brown. Remove from oven.
  • In a frying pan melt the butter and fry the bacon until crisp, then add the leek slices and fry until soft.
  • Remove from heat and spread the mixture evenly in the piecrust.
  • Beat the eggs and stir in the milk, mustard and cheese. Season with pepper to taste.
  • Pour egg mixture over the bacon and leek.
  • Bake for 30 minutes or until the top has turned golden brown.
  • Cool and slice into 6-8 pieces.
  • Serve with a salad, or wrap some up to take to the office for lunch!

    Okay, hon - anything that involves leeks, bacon and cheese has my name written all over it. I cannot make this fast enough...must get the missing bacon and leeks tomorrow...woo hoo!
