Ingredients

2 packages frozen corn or 3 to 6 ears of fresh corn cut off cob

1 onion, chopped

1 bell pepper, chopped

2 tablespoons cooking oil

2 teaspoons creole seasoning

1 can rotel tomatoes and green chilies

1 tablespoon sugar

1/4 cup milk

Directions

In a large saucepan, heat oil and saute onion and bell pepper until wilted.

Add rotel tomatoes and green chilies and the creole seasoning.

Continue cooking over medium heat for 5 minutes.

Add corn, milk, and sugar and simmer for 45 minutes to 1 hour.

Serve hot.
