Cajun Corn Recipe
This is another recipe from my rotel Cookbook.... The recipe was by a gentleman named Don Babin. The recipe is excellent if you love spicy veggies...

Ingredients
  • 2 packages frozen corn or 3 to 6 ears of fresh corn cut off cob
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 tablespoons cooking oil
  • 2 teaspoons creole seasoning
  • 1 can rotel tomatoes and green chilies
  • 1 tablespoon sugar
  • 1/4 cup milk

Directions
  1. In a large saucepan, heat oil and saute onion and bell pepper until wilted.
  2. Add rotel tomatoes and green chilies and the creole seasoning.
  3. Continue cooking over medium heat for 5 minutes.
  4. Add corn, milk, and sugar and simmer for 45 minutes to 1 hour.
  5. Serve hot.
