Spiced Carrots

- 2tsp. olive oil shopping list
- 2 garlic cloves,minced shopping list
- 11/2Tbs chili powder shopping list
- 1/2tsp ground cumin shopping list
- 2 lbs carrots(sliced diagonally 1/2" thick) shopping list
- 1tsp fresh grated lemon zest shopping list
- 2/3c water shopping list
- coarse salt shopping list
- 2Tbs. fresh lemon juice shopping list
How to make it
- In a large skillet,heat oil over low heat. add garlic and cook till tender,about 2 mins. Stir in chili powder and ground cumin;cook 1 min. Add carrots,lemon juice,water and coarse salt;bring to a boil. Reduce to a simmer;cover,and cook until carrots are tender,15 to 20 mins. Uncover,raise heat to high and cook until any remaining liquid has evaporated,2 to 3 mins.. Stir in fresh lemon juice and serve
