I came up with this recipe quiet by accident as I was preparing a glaze and put the Cajun seasoning instead of a fish seasoning it is really sooo goood better than my original Salmon. I serve this with home style fries, a salad and dessert

Ingredients
  • 3 Tbsp. Cajun spice
  • 1 tsp. brown sugar
  • 1/4 tsp. kosher salt
  • 4 boneless, skinless salmon fillets
  • 1/4 cup Seville orange marmalade ( or your choice)
  • 1 Tbsp. fresh lime juice
  • HOME STYLE FRIES:
  • 1 1/2 lbs. russet potatoes, peeled, cut into 1" cubes
  • 1/4 vegetable oil
  • 1 tsp. dried thyme, crushed
  • Salt and pepper to taste

Directions
  1. Combine Cajun spice, sugar and salt in a small bowl.
  2. rub over all surfaces of fillets.
  3. Saute fillets in oil in a non stick skillet over medium high heat for 4 minutes.
  4. Turn and sauté an additionally 3 minutes.
  5. Blend marmalade and lime juice swirl in pan until melted.
  6. Carefully turn the fillets to glaze on all sides.
  7. Fillets is done when it begins to flake when tests with a fork.
  8. HOME FRIES:
  9. Parboil potatoes 5 minutes in 3 qts. of boiling water, drain well.
  10. Heat oil in a large non stick sauté pan over medium high heat.
  11. Add potatoes and sauté 5 minutes without stirring.
  12. Stir and cook another 7 minutes, until golden brown.
  13. Season with thyme, salt and pepper.
