Ingredients
  • 6 Poblano peppers, washed, with tops and seeds removed from cavity
  • 3 cups cooked polenta
  • 7 ounces blue cheese
  • 7 ounces chopped ham
  • 1 T Italian Seasonings (adjust to taste)
  • Salt and Pepper to taste
  • 1 can Tomato Sauce

Directions
  1. Blanch the peppers in boiling water for several minutes
  2. Allow peppers to cool enough to handle
  3. Mix the cooked polenta with the blue cheese, ham, and seasonings
  4. Stuff each pepper with polenta mixture and arrange in a baking dish
  5. Top the peppers with tomato sauce
  6. Bake for about 25-30 minutes or until filling is bubbly in 350 degree oven
