Zucchini Appetizers Recipe
Another recipe for using up the tons of zucchini from your garden..lol. Easy to make and tasty... Can be served warm or cold.. I've even made it as a side dish

Ingredients
  • 3 c thinly sliced unpeeled zucchini
  • 1 c Bisquick
  • 1/2 c finely chopped onion
  • 1/2 c freshly grated Parmesan cheese
  • 2 tbsp chopped fresh Italian parsley
  • 1/2 tsp sea salt
  • 1/2 tsp crushed oregano
  • Dash freshly ground black pepper
  • 1 clove garlic, chopped
  • 1/2 c oil
  • 4 eggs, slightly beaten

Directions
  1. Heat oven to 350 F
  2. Grease 13x9 in baking pan
  3. Mix all Ingredients together
  4. Spread in pan
  5. Bake until golden brown, about 25 minutes
  6. Let stand 10 minutes before cutting
  7. Cut into squares like brownies
  8. Can be eaten hot or cold

Like, whoa. I have leftover zucchini in my fridge, just sitting around getting fuzzy. If I get home in time, I might just make these tonight. Awesome.


We are definitely cut from the same cloth lol I love my instant mixes and can't imagine life without em ;) What's not to love about this? I will be trying it.
