How to make it

  • Heat oven at Gas mark 6
  • cream Butter and Sugar together.
  • add the Beaten up Eggs, separately
  • add, all except 1 tbspn Flour, and beat well.
  • add the Prepared Fruit and mix well.
  • Add the Vanilla essence
  • Mix the Baking powder with the rest of the Flour.
  • Add this and beat for 2 or 3 minutes.
  • Hall fill some paper cases.
  • Cook in the oven for 15 - 20 minutes until golden brown
  • These are light and delicious
  • IF YOU ARE MAKING THESE FOR CHILDREN YOU COULD ALWAYS TOP THEM WITH LITLE ICING AND MAYBE A CHERRY ON TOP TO MAKE THEM ATTRACTIVE.

    What an interesting recipe! I love the "their weight in. . ." measurements. It means you can use whatever size egg you have and they'll turn out fine. Jack and I are tea drinkers--I'll have to make these soon and have them with our "cuppa".
